I got to sleep almost in time to get 8 hours, but not quite. I did not want to get up in the morning at all. I can’t wait until I’m allowed to do strenuous activities again. I want to get back into the groove of waking up and walking a mile. Which could be non-strenuous, but with my hill, I’d have to go super slow to make it easy. I want it to be strenuous!
I’ve been trying to have fruit in the morning with my breakfast sandwich for the sake of more fiber in my diet, but yesterday one of my choir friends gave me a bunch of tomatoes and a couple of cucumbers, with a caution that some of the tomatoes were very ready to eat. So I had some breakfast tomatoes, which were delicious. Store bought tomatoes are good, but there’s just such a depth of flavor with garden grown ones. I’m going to be munching on those all week.

I’m thinking of doing some pickles like Ambrose use to make for us with the cucumbers, but I might just chop them up and eat them in my Spam salads. I’ll need to see if I have a jar with a top that I can use if I’m going to do pickles. I think he just used vinegar and sugar, but I’m not sure of the ratio. I’ll have to experiment.
Work went well today. I’m going into Boise on Thursday to exchange my computer and monitors, and now I’ve got an appointment with a co-worker/friend to go over an update to the document imaging system workflow. That will be a nice way to end my Boise trip. I just hope I can be well rested by Thursday so the drive isn’t a slog.
I walked to the mailbox at lunch. The weather is just cool enough that I can do that without getting my work clothes all sweaty. My passport card came back to me, and it appears that it’s still valid, so now I’ll have a card valid through 2033 and a book through 2035. I’m glad to have that all sorted out well before I plan on flying anywhere (domestically or internationally).
I’m going to need to pick up some more frozen vegetables for my lunch ramen soon. I’m getting used to doing the healthy thing and putting a serving of veggies in with the noodles. I tried to order a case of my favorite flavor from the local grocery store, but they can’t get that flavor so I have to buy it off of Amazon.
For dinner, I cut up some more of the ripe tomatoes for Spam salad. This morning, I made a fresh batch of Italian dressing with the no sodium mix that Ambrose purchased. I added sodium to it by using the seasoned rice wine vinegar instead of plain vinegar. The dressing tastes great, and I’m glad I did that instead of buying a bottle of dressing from the store. Ambrose bought this neat dressing container for just that purpose. I finished the last of what he had made on Monday. But at least I’m using things that he purchased. It’s sad to finish the things that he made. Sad to think about all the things of his that will wear out and get used up, and I’ll just have to keep going.
Family zoom was fun tonight. I told my parents what the songs are going to be for the Christmas concert. There were some fairly common ones that he didn’t recognize. I think they’re fairly common anyway, but, then again, he didn’t grow up in the states. I’m glad that we’re continuing to meet on a regular basis, though we’ve gone from twice a week down to once, on average. I know they’d meet more if I asked, but I think I’m doing okay.
The eye remains frustratingly blurry, but is otherwise doing well as far as I can tell. It feels like I’m wearing the wrong prescription, and that’s just how it’s going to be until more time passes. I think the doctor said we could think about glasses at the six week appointment, but I’ve also read that it could take longer. The eyelid droop is still there, but improving, which is all I can ask at this point.
And now I’ve got to do my exercises and then get to bed so I can get a good night’s sleep. I want to get up and listen to all the writing class videos for this week so I can start simmering on the assignment with several days to spare. The last two weeks, I was surprised by the assignment and it was a bit more stressful. Plus I need to think of what to write for the September story because that’s coming up.
